If you've scrolled a food feed in the last five years, you've seen it: a red-edged, cheese-pulling taco getting dunked into a mahogany bowl of broth. That's quesabirria — and it's not a trend, it's a technique. The good news? Once the birria is going, the tacos come together in minutes.

This is the recipe we make at home. One packet, one pot, one griddle. No blender, no toasting chiles, no fifteen-ingredient spice list. Just deep, slow-cooked flavor and the crispiest tacos you'll make all year.

A brief history.

Birria was born in Jalisco, Mexico in the 1500s — originally made with goat, slow-braised in a chile-and-spice adobo, and served for weddings, baptisms, and hangovers alike. It traveled north to Tijuana in the 20th century, where cooks swapped in beef and started serving the consomé alongside the tacos for dipping.

Quesabirria — the cheesy, griddled taco version — is the Tijuana remix. Street vendors began dipping tortillas in the rendered consomé fat, adding shredded Oaxaca cheese, folding them like quesadillas, and crisping them on the plancha. It exploded out of the Bay Area and Los Angeles in the late 2010s and hasn't slowed down since. This recipe is our love letter to that lineage.

Ingredients.

  • 1 Birria Packet
  • 3–4 lbs beef chuck roast (cut into large chunks)
  • 4 cups water
  • 12 corn tortillas
  • 2 cups shredded Oaxaca or mozzarella cheese
  • 1/2 white onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 2 limes, cut into wedges
  • Neutral oil, for the pan

  • A slow cooker, Dutch oven, or Instant Pot
  • A wide skillet or griddle
  • Tongs and a slotted spoon
  • Small bowls for the consomé

How to make it.

    Build the birria

    Add 4 cups of water, the beef chuck, and one Birria Packet to a heavy pot, slow cooker, or Instant Pot. Stir once to combine — no browning needed.

    Slow-cook the meat

    Slow cooker: low for 6–8 hours. Stovetop / Dutch oven: covered simmer for 3–4 hours. Instant Pot: high pressure for 60 minutes, then a 15-minute natural release.

    Shred and skim

    Pull the beef out and shred with two forks. Skim the bright red-orange fat from the top of the consomé and reserve it — that's your taco oil.

    Dip the tortillas

    Dip each corn tortilla into the reserved consomé fat so it's fully coated on both sides. This is what gives quesabirria its signature crackly red edge.

    Griddle the tacos

    Lay the dipped tortilla on a hot griddle or skillet over medium heat. Sprinkle cheese on one half, then a generous pile of shredded birria, onion, and cilantro. Fold and press.

    Crisp both sides

    Cook 1–2 minutes per side until the cheese is fully melted and the tortilla is crisp and deeply red. Don't rush the crust — that's the point.

    Serve with consomé

    Ladle warm consomé into small bowls for dipping. Top with extra onion, cilantro, and a squeeze of lime. Eat immediately, dip aggressively.

Final word.

Quesabirria is one of those rare dishes that looks harder than it is. The packet does the heavy lifting — hours of slow-cooking build the flavor, and then you're just dipping, folding, and crisping. Serve it with cold beer, hot consomé, and a stack of napkins. Leftovers (if there are any) reheat beautifully in a skillet the next day.
