The birria burrito is what happens when you take everything great about a taqueria plate — rice, beans, meat, cheese, salsa — and wrap it in a warm tortilla you can eat with one hand. Slow-cooked beef, crispy seared shell, dip it in consomé between bites. It's a full meal in a package.
The trick to a great burrito isn't the filling — it's the assembly. Warm your tortilla, don't overstuff, sear the seam. Get those three right and you'll never buy a mediocre lunch burrito again.
A brief history.
The burrito comes from northern Mexico, born in the states of Chihuahua and Sonora where wheat grew better than corn and flour tortillas became the norm. The word literally means "little donkey" — one origin story says traveling workers packed everything into a tortilla the way a donkey carries cargo. It stayed a regional Mexican dish until it crossed into the American Southwest and evolved, especially in California's Mission District, into the fat, everything-inside burrito we know today.
Birria burritos are a modern remix — the Jalisco slow-braise from central Mexico, wrapped in a northern-Mexican tortilla, plated Mission-style with rice and beans. Three regions on one plate.
Ingredients.
- •1 Birria Packet
- •2–3 lbs beef chuck roast (cut into large chunks)
- •4 cups water
- •4 large flour tortillas (burrito-size, 10–12 inch)
- •2 cups cooked white or Mexican rice
- •1 1/2 cups refried or black beans, warmed
- •2 cups shredded Oaxaca, Monterey Jack, or Mexican cheese blend
- •1/2 white onion, finely diced
- •1/2 cup fresh cilantro, chopped
- •2 limes, cut into wedges
- •Optional: salsa roja or verde, sliced avocado, pickled jalapeños
You'll also need
- A slow cooker, Dutch oven, or Instant Pot
- A wide skillet or griddle
- A dry skillet or gas flame for warming tortillas
- Small bowls for the consomé
How to make it.

Build the birria
Add 4 cups of water, the beef, and one Birria Packet to a heavy pot, slow cooker, or Instant Pot. Stir once — no searing needed.

Slow-cook the meat
Slow cooker: low for 6–8 hours. Stovetop / Dutch oven: covered simmer for 3–4 hours. Instant Pot: high pressure for 60 minutes, then a 15-minute natural release.

Shred and skim
Pull the beef out and shred with two forks. Skim the red-orange fat off the top of the consomé and reserve some for the pan. Save the rest of the consomé warm for dipping.

Warm the tortillas
Heat each flour tortilla for 15–20 seconds on a dry skillet or directly over a gas flame until soft and pliable. Cold tortillas crack when you fold them — this step is non-negotiable.

Build the burrito
Lay a tortilla flat. Down the center, layer rice, beans, a generous pile of shredded birria, cheese, onion, and cilantro. Don't overstuff — a flatter, longer line is easier to roll than a tall mound.

Fold and roll
Fold in the left and right sides over the filling, then fold the bottom edge up over the filling and roll away from you, tucking the sides as you go. End with the seam side down.

Sear and slice
Heat a wide skillet over medium-high with a spoon of the reserved red fat. Lay the burrito seam-side down and sear 2 minutes per side until deeply crisp and mahogany. Slice on a diagonal and serve with warm consomé for dipping.
Final word.
A birria burrito is one of those rare foods that's just as good the moment you make it as it is wrapped in foil and taken to work the next day. The searing crust holds up, the meat gets richer overnight, and the whole thing eats like a small miracle. Make a batch on Sunday, thank yourself all week.

Ingredients
- • 1 Birria Packet
- • 2–3 lbs beef chuck
- • 4 burrito-size flour tortillas
- • 2 cups cooked rice
- • 1 1/2 cups beans
- • 2 cups melting cheese
- • Onion, cilantro, lime
Instructions
- Slow-cook beef, water, and packet 6–8 hr. Shred.
- Warm tortillas until pliable.
- Layer rice, beans, birria, cheese, onion, cilantro. Roll tight.
- Sear in reserved fat 2 min per side until crisp.
- Slice and serve with warm consomé for dipping.
